Just cooking some cabbage/carrot fritters on top of some konjac no carb rice cooked with beans, broccoli and ginger paste @TAB. No oil, no eggs, no wheat flour. I use linseed meal and almond flour with water to bind the patties (low carb) and oven bake so theres less fat. With a drizzle of lemon juice on the rice mixture and mayo on the patties. Now going for a W.A.L.K. The things you gotta do to stay healthy!?!?

Its more like "I'm hanging in there" @TAB!!! Just got back from another evening walk. Its kinda nice but its really testing my willpower. Was meant to have a chat with diabetes educator today but I'll postpone it for next week. Wanted to see how much the blood irradiation is reducing my blood numbers.  I try and eat healthy for the most part but now have to substitute foods that are high in carbs for foods low in carbs. Got my morning fasting levels down to 5.8 this morning so making more progress. Just got to get it down by another .3 - .8 points and keep it there! Oh golly...
